I actually made cupcakes from this recipe using Bob's Red Mill GF oat flour. The cupcakes were perfect, okay, not flat on the top, but the crumb held together and was moist! I like that the flavor of the chocolate comes through without the sugar hitting your tastebuds first. Oh, and the FROSTING!! What a wonderful frosting recipe. I made half the amount, but found I needed to add more powdered sugar. And, I used coffee instead of water for the fluid.
This chocolate cake surpasses any premixed GF I have ever used.
